چکیده

Chlorogenic acid, the depside formed by the condensation of caffeic and quinic acids, was first obtained in crystalline form by Gorter (1909) from green coffee beans, although considerably earlier Ludwig & Kromeyer (1854) had noted the presence in the seeds of the sunflower of a compound which was undoubtedly chlorogenic acid. The acid was first thought to be a glycoside of caffeic acid, but Gorter (1909) showed that the 'sugar' was, in fact, quinic acid and that the acidity was due to the free carboxyl group of this acid. Finally, Fischer (see Freudenberg, 1933) proved chlorogenic acid to have the following structure:

Evidences for Chlorogenic Acid — A Major Endogenous Polyphenol Involved in Regulation of Ripening and Senescence of Apple Fruit

To learn how the endogenous polyphenols may play a role in fruit ripening and senescence, apple pulp discs were used as a model to study the influences of chlorogenic acid (CHA, a major polyphenol in apple pulp) on fruit ripening and senescence. Apple ('Golden Delicious') pulp discs prepared from pre-climacteric fruit were treated with 50 mg L(-1) CHA and incubated in flasks with 10 mM MES buff...

Ethylene Intensifies but is not a Requirement for Methyl Jasmonate- Enhanced Anthocyanin Synthesis by ‘Fuji’ Apple Fruit

Exogenous methyl jasmonate (MJ) stimulates anthocyanin accumulation in apple (Malus sylvestris var. domestica) fruit peel. Anthocyanin synthesis in some apple cultivars reportedly is also stimulated by exogenous ethylene, however, the role of ethylene action in regulation of anthocyanin synthesis in apple fruit is unclear. MJ enhances ethylene sensitivity in various plants, therefore, studies w...

Activity and concentration of polyphenolic antioxidants in apple juice. 2. Effect of novel production methods.

There is a great interest in food components that possess possible health-protecting properties, as is the case with flavonoids. Previous research showed that conventional apple juice processing resulted in juices poor in flavonoids and with a low antioxidant activity. This paper shows that it is possible to improve flavonoid content in juice and its antioxidant activity by applying an alcoholi...

Influence of 1-aminoethoxyvinylglycine hydrochloride and α-naphthalene acetic acid on fruit retention, quality, evolved ethylene, and respiration in apples

Effects of 1-aminoethoxyvinylglycine hydrochloride (AVG or Aviglycine HCl or ReTain) and α-naphthalene acetic acid (NAA) on fruit retention, fruit quality, eveloved ethylene, and respiration in ‘Rome Beauty’ and three ‘Delicious’ apple cultivars (Malus domestica Borkh.) were studied.  The experimental trees were treated with either AVG, applied at 120 g a.i. per 935 L. ha-1 or NAA, applied at t...
